Pumpkin Spiced Quinoa

PUMPKIN SPICED QUINOA

1/4 cup extra virgin olive oil
1 onion, diced
2 carrots, grated
3/4 cup raisins or dried cranberries
1 Tbsp pumpkin pie spice
1-1/2 cups uncooked quinoa, rinsed
3/4 cup chopped fresh cilantro, optional
1-1/2 cups fresh orange juice
1-1/2 cups water
3/4 cup chopped walnuts, toasted

~ Heat oil over medium heat
~ Cook onion, carrot, raisins and pumpkin pie spice till onion is tender and golden (5 min) 
~ Add quinoa, allow to toast for a few minutes
~ Stir in cilantro, orange juice, water and bring to a boil
~ Reduce heat, cook till liquid is absorbed, approx 15 minutes
~ Remove from heat and let stand 5 minutes
~ Add in walnuts and fluff with fork
