CANDIED SWEET POTATOES
Try a healthier version of candied sweet potatoes this holiday!
4 medium sweet potatoes, peeled and cut into 1-inch pieces
1 Tbsp extra virgin olive oil
1/4 cup pure maple syrup
1/4 tsp salt
1/2 tsp cinnamon
pinch of nutmeg
1/4 cup chopped pecans
~ Preheat oven to 375 degrees
~ Toss potatoes in large bowl with oil, syrup, salt, cinnamon, nutmeg and pecans
~ Place mixture in a 9 x 13 inch baking dish and roast until fork-tender, about 40 minutes
