Ingredients:
- 1 pound chicken breast
- 1 cup celery, cut in 1 inch pieces
- 1 cup onions, finely chopped
- 2 TBSP coconut oil
- 1 cup carrots, cut in 1 inch pieces
- 1/2 TBSP minced garlic, 1 inch pieces peeled
- 2 cups potatoes
- 1 TSP pepper
- 1/2 TSP salt
- 3 cups low sodium chicken broth
- 1/2 cup almond milk
- 1 TBSP parsley, for garnish
Directions:
Heat coconut oil in a pan on the stove. Add in celery, carrot, onion, garlic, salt, pepper and parsley. Saute on the stove for 2 minutes. Then add the raw chicken into the crockpot along with cooked veggies and potatoes. Then add chicken broth, cover and cook on low for 6 hours. When finished cooking, remove chicken to shred and add back in the crockpot. Enjoy!
