Healthy Spaghetti Squash Casserole

Ingredients:
- 1lb ground turkey
- 1 medium spaghetti squash
- 1 red onion
- 1 green bell pepper (diced)
- 3 minced garlic cloves
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup reduced fat mozzarella (shredded) or cottage cheese - 1 can diced tomatoes
- Fresh basil to garnish

Direction:
Preheat your oven to 400 degrees and place a rack in the center of your oven. Cut spaghetti squash in half and drizzle with olive oil. Cook in the oven for 40 minutes. When squash cools some, use a fork to start making the strings out of the center. Lower your oven to 350 degrees. In a large skillet, heat up some olive oil then add turkey, onion, salt, pepper and bell pepper. Break apart the meat until brown and veggies are tender. Then add the garlic, Italian seasoning and drained tomatoes. Cook for an extra few minutes. Stir in a half cup of shredded cheese. In a casserole dish cover the bottom with nonstick spray and add the shredded squash mixture. Bake this uncovered for 20 minutes. Remove and add the other 1/2 cup of cheese to the top and place back into over for 5-10 minutes. Add basil to garnish and enjoy this hot and healthy meal!
