High Protein Egg Bites

Ingredients:
- 8 pasture raised eggs
- 1/2 cup shredded turkey
- 1/2 cup low fat cheddar cheese
- 1/2 cup bell pepper
- 1/4 cup chopped red onion
- 1/4 cup spinach


Directions:
First preheat your oven to 375, then grease a 12 cup muffin tin with extra virgin olive oil. In a large bowl, whisk the eggs then stir in the shredded turkey, cheddar cheese, bell peppers, red onion, and spinach into the whisked egg bowl. Fill the muffin tin cups more than 1⁄2 full then bake in the oven for 18-20 minutes or until the tops are golden brown.


Tips:
Pack these egg bites for a protein packed snack on the go.
You can also substitute some of the ingredients with other items such as tomatoes or mushrooms.
You can also bake and store them in the fridge until they are ready to be eaten.
