I don't think I will ever make it big as a nutrition coach because despite my Precision Nutrition certifications I'm not a chef, and I don't make gourmet healthy meals by any means...
One important thing I learned through the one year long course though was that 90% of nutrition is about our mindset.
Our mindset around food.
Our belief system around what we eat, why we eat, who we are and what food does for us physically, psychologically (mentally & emotionally).
There is a ton of research and biochemistry explaining how it all works, but it doesn't matter if we don't believe we can live without ____ or never thought _____ was possible or always have to have ______ with my _____.
And what I further discovered was that it takes creativity, whether your meals are bare or beautiful.
A great driving force behind creativity is NOT "thinking outside the box" but "squeezing tightly inside very uncomfortable constraints".
Yesterday I put myself in that little box. This sandwhich looking thing came from a day with 3 active boys out for summer, and me deciding:
1. we aren't eating out; and
2. we aren't going to the grocery store.
So we had to make do with whatever we had in the house. The boys loved it, most likely because they were famished from intense gymnastics training and could eat a horse, but also because it tasted pretty good in a nontraditional sense.
Onions, cheese, mayo, high protein organic bread toasted - dinner served. We scrounged up a few other things but none of it was pretty, all of it was healthy...
Yesterday we fueled our bodies and made some phenomal memories!
The memories came from the day's activities, and the food was a fuel rather than an event or even part of the event.
Pretty cool. Super duper fun!
