Oatmeal Pancakes |

Maybe it is the old fashioned oats used to make these pancakes, or the fact that it is only egg whites as opposed to whole eggs that are called for, but these airy but filling pancakes are a must try.
Ingredients
- 1/2 cup old fashioned oats
- 3 egg whites
- 1/2 teaspoon vanilla
- 1/2 teaspoon baking powder
- cinnamon, to taste
- 2 teaspoons pumpkin, optional
Instructions
- Mix all ingredients well and let sit for 10 minutes. Cook over low heat.
