Nutty Brown Rice |

Almonds give a little crunch to your typical rice dish.
Ingredients
- 2 teaspoons extra-virgin olive oil
- 1 small onion, diced
- 1/2 cup brown rice, uncooked
- 1 1/2 cups chicken broth
- 3/4 cup toasted sliced almonds
- 1 bunch chopped parsley
- Sea salt and pepper to taste
Instructions
- Heat oil in a medium saucepan over medium-high heat. Add onion and cook until soft, about 3 minutes. Add rice and stir to coat.
- Add broth and bring to a simmer, cover and cook until rice is tender, about 40 minutes.
- Stir almonds into rice and season with salt and pepper. Top with parsley just before serving.
