Moroccan Syle Chicken

Using a whole frying chicken as in this recipe, really adds more flavor. Marinating the chicken in these perfect spices and ingredients makes this mouth watering recipe one that you will have to keep for future uses!
Ingredients

  • 1 frying chicken cut up into pieces
  • 1/4 cup naturally fermented soy sauce
  • 1/4 cup chicken stock
  • 1/2 teaspoon stevia
  • Juice of 2 lemons
  • Zest of 2 lemons
  • 3-4 cloves garlic, peeled and mashed
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon each dried oregano, thyme, and crushed green peppercorns
  • 3 tablespoons melted butter
  • 2 cups chicken stock

Instructions

  1. Mix soy sauce, 1/4 chicken stock, lemon juice, lemon zest and all the spices together. Marinate the chicken pieces in this mixture or several hours or overnight.
  2. Remove chicken pieces, pat dry and set skin side up in a stainless steel baking pan, reserve marinade.
  3. Brush the chicken with butter and season with salt and pepper and bake at 375 degrees for about 2 hours. Reduce heat if the chicken begins to burn. Remove chicken to heated platter while making sauce.
  4. Pour chicken stock into a sauce pan, bring to a boil and stir well. Add marinade and drained apricot halves. Let sauce reduce by about one-half. Check seasoning and pour over chicken pieces and serve.
