Mini Casseroles |

These cute little casseroles may be small but are bursting with flavor.
Ingredients
- 1 large onion, chopped
- 1 green onion, chopped
- 2 medium carrots, grated
- 2 rib celery, minced
- 4 cups white or pinto beans
- 2 teaspoons chicken or vegetable soup base
- 2-3 tomatoes, sliced 1/4 inch thick
- 1 1/2 cup grated raw cheese
Instructions
- In a medium saucepan, cook onions, carrots, and celery in 2 tablespoons water for 4 minutes. Add beans and soup base. Heat through.
- In 6 individual custard cups, place 1/2 to 1 cup of the bean mixture (depending on size of cups.) Top each with one slice of tomato and sprinkle with 2 tablespoons grated cheese.
- Place filled cups in a preheated 450 degrees oven. Turn oven to broil and bake until cheese is brown and bubbly. Or, bake 10-15 minutes at 450 degrees Fahrenheit.
