Indian Style Corn

There are many ingredients that make this Indian Style Corn dish delicious- Mustard seeds, red pepper flakes and ginger just to name a few.
Ingredients

  • 6 ears corn, cut off the cob
  • 2 teaspoons mustard seeds
  • 1/2 teaspoons fenugreek seeds
  • 1/4 teaspoon red pepper flakes
  • 2 teaspoons fresh ginger, peeled and grated
  • 6 tablespoons organic butter
  • 2 medium onions, chopped
  • 1/2 teaspoon turmeric
  • 3 jalapeno peppers, seeded and chopped (wear gloves)
  • 4 cloves garlic, peeled and mashed
  • 2 cups organic full fat plain yogurt
  • Sea salt

Instructions

  1. Saute the mustard seeds, fenugreek seeds, red pepper flakes and ginger in butter. Add onion and jalapeno peppers and saute until tender. Add turmeric and stir.
  2. Add corn and garlic and mix well. Simmer gently until the corn is just tender. Stir in the yogurt and season to taste. Garnish with cilantro.
