Ingredients
- 1 1/2 pounds boneless, skinless chicken breast, cut into 1 inch pieces
- 1 tablespoon extra-virgin olive oil
- 1 small onion, diced
- 4 cloves garlic, peeled and mashed
- 1 tablespoon curry powder
- 2 tablespoons fresh ginger, grated
- 1 head cauliflower, cut into florets
- 1 can coconut milk
- 1/2 cup chicken stock
- Sea salt and pepper
Instructions
- Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 5 minutes. Using a slotted spoon remove the chicken from the pan and set aside.
- Reduce heat to medium-low and add the onion, garlic, curry powder, and ginger to the same skillet. Cook until fragrant, about 2 minutes. Add the cauliflower, coconut milk and chicken stock, cover and simmer, stirring occasionally, until the vegetables are crisp tender, about 5 minutes.
- Add chicken back to the skillet and cook until the sauce thickens and reduces, about 5 minutes. Serve hot.
