Ginger Chicken and Snow Peas |

Soy sauce and freshly grated ginger are just two ingredients of this delicious chicken meal.
Ingredients
- 1 pound snow peas, strings removed
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon naturally fermented soy sauce
- 1 tablespoon fresh ginger, grated
- 1 1/2 pounds boneless, skinless chicken breasts
- 4 scallions, sliced
- 2 teaspoons sesame oil
Instructions
- Bring a saucepan of salted water to a boil and add the snow peas. Boil for 2 minutes, drain and place in a bowl of ice water for 1 minute. Drain and pat dry.
- Combine 1 tablespoon olive oil, 1 tablespoon soy sauce and ginger in a small bowl and mix. Add the chicken and toss to coat.
- Heat remaining oil in a skillet over medium-high heat. Add chicken and cook until golden and no longer pink on the inside, about 5 minutes per side. Transfer to cutting board and slice.
- Combine the peas, scallions, sesame oil and remaining soy sauce in a bowl and mix together. Serve chicken over the peas.
