Garlic Greens and Beans with Pasta

Serves: 6
Garlicky brown rice or Ezekiel spirals and kale, cannellini beans, and balsamic vinegar are what make this recipe taste so good.
Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 6 cloves garlic, peeled and mashed
  • 1 red bell pepper, diced
  • 1 bunch kale, washed and chopped, with stems removed
  • 1/4 cup chicken stock
  • 2 tablespoons balsamic vinegar
  • 1 pound brown rice or Ezekiel pasta, spirals
  • 3 cups cannellini beans, cooked and drained
  • Sea salt and pepper

Instructions

  1. Cook pasta according to directions on package. When done drain.
  2. Heat oil in a skillet over medium-high heat. Add garlic and red pepper and saute for about 2 minutes. Add greens and cook another minute.
  3. Add the chicken stock and vinegar to the greens adn cover and cook until the greens are wilted, about 8 minutes.
  4. Add the beans and mix. Add the pasta and toss gently. Serve hot.
