Garlic Greens and Beans with Pasta |

Garlicky brown rice or Ezekiel spirals and kale, cannellini beans, and balsamic vinegar are what make this recipe taste so good.
Ingredients
- 1 tablespoon extra-virgin olive oil
- 6 cloves garlic, peeled and mashed
- 1 red bell pepper, diced
- 1 bunch kale, washed and chopped, with stems removed
- 1/4 cup chicken stock
- 2 tablespoons balsamic vinegar
- 1 pound brown rice or Ezekiel pasta, spirals
- 3 cups cannellini beans, cooked and drained
- Sea salt and pepper
Instructions
- Cook pasta according to directions on package. When done drain.
- Heat oil in a skillet over medium-high heat. Add garlic and red pepper and saute for about 2 minutes. Add greens and cook another minute.
- Add the chicken stock and vinegar to the greens adn cover and cook until the greens are wilted, about 8 minutes.
- Add the beans and mix. Add the pasta and toss gently. Serve hot.
