Eggplant Curry |

If you have been looking for just the right eggplant recipe, this one will definitely be a keeper!
Ingredients
- 3 medium eggplant
- 2 medium onions, peeled and chopped
- 1 teaspoon fenugreek seeds
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 teaspoon fresh ginger, grated
- 5 tomatoes, peeled, seeded and chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup extra-virgin olive oil
Instructions
- Peel and cube eggplant. Place in a bowl with a little salt and let stand 1 hour. Put in a colander and rinse, than pat dry with a paper towel.
- Saute the eggplant in batches in a little olive oil. Transfer to a rectangular baking dish.
- Saute the onions and spices in olive oil until the onions are tender. Add remaining ingredients to the onions except the cilantro. Simmer a few minutes, stirring, until well mixed.
- Add to the eggplant and mix well. Bake, uncovered, at 350 degrees for about 1 hour. Garnish with chopped cilantro.
