Eggplant Curry

If you have been looking for just the right eggplant recipe, this one will definitely be a keeper!
Ingredients

  • 3 medium eggplant
  • 2 medium onions, peeled and chopped
  • 1 teaspoon fenugreek seeds
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon fresh ginger, grated
  • 5 tomatoes, peeled, seeded and chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup extra-virgin olive oil

Instructions

  1. Peel and cube eggplant. Place in a bowl with a little salt and let stand 1 hour. Put in a colander and rinse, than pat dry with a paper towel.
  2. Saute the eggplant in batches in a little olive oil. Transfer to a rectangular baking dish.
  3. Saute the onions and spices in olive oil until the onions are tender. Add remaining ingredients to the onions except the cilantro. Simmer a few minutes, stirring, until well mixed.
  4. Add to the eggplant and mix well. Bake, uncovered, at 350 degrees for about 1 hour. Garnish with chopped cilantro.
