Curried Chicken and Rice Soup |

Whip this chicken curry soup together and it might as well be comfort in a bowl.
Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 onion, chopped
- 4 cups chicken stock
- 1 can stewed tomatoes
- 3 boneless, skinless chicken breast, cut into 1/2 inch pieces
- 1/2 brown rice, cooked
- 2 teaspoons curry powder
- 1 teaspoon garlic powder
- 1/2 teaspoon thyme
- Sea salt and pepper
Instructions
- Heat oil in a soup pot over medium-high heat. Add the onion and cook till the onion is translucent. Add the chicken stock and stewed tomatoes, and bring to a boil
- Stir in the remaining ingredients; cook until chicken is done, about 20 minutes.
