Curried Chicken and Rice Soup

Whip this chicken curry soup together and it might as well be comfort in a bowl.
Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 onion, chopped
  • 4 cups chicken stock
  • 1 can stewed tomatoes
  • 3 boneless, skinless chicken breast, cut into 1/2 inch pieces
  • 1/2 brown rice, cooked
  • 2 teaspoons curry powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • Sea salt and pepper

Instructions

  1. Heat oil in a soup pot over medium-high heat. Add the onion and cook till the onion is translucent. Add the chicken stock and stewed tomatoes, and bring to a boil
  2. Stir in the remaining ingredients; cook until chicken is done, about 20 minutes.
