Curried Bean Sprouts |

Just the right amount of flavor with this curried bean sprout recipe. You will realize you haven't tasted a dish quite like this.
Ingredients
- 1 bunch green onions, finely chopped
- 2 stalks celery, finely chopped
- 1/4 green pepper, finely chopped
- 3 cloves garlic, peeled and chopped
- 1 apple, peeled and chopped
- 4 tablespoons organic butter
- 1 1/2 cups chicken stock
- 2 tablespoon arrowroot powder mixed with 2 tablespoons water
- 1 tablespoons curry powder
- Pinch of cayenne pepper
- 1/2 currants
- 4 cups bean sprouts
- 1/2 toasted peanuts, chopped for garnish
- Fresh chives, chopped for garnish
Instructions
- Melt butter in a large, heavy skillet. Saute onion, celery, pepper, garlic, and apple for about 1 minute.
- Add chicken stock, currants, seasonings and arrowroot mixture. Saute, stirring, until the liquid begins to thicken.
- Add sprouts, mix well and cook until just tender, about 1 minute. Serve garnished with peanuts and chives.
