Curried Bean Sprouts

Just the right amount of flavor with this curried bean sprout recipe. You will realize you haven't tasted a dish quite like this.
Ingredients

  • 1 bunch green onions, finely chopped
  • 2 stalks celery, finely chopped
  • 1/4 green pepper, finely chopped
  • 3 cloves garlic, peeled and chopped
  • 1 apple, peeled and chopped
  • 4 tablespoons organic butter
  • 1 1/2 cups chicken stock
  • 2 tablespoon arrowroot powder mixed with 2 tablespoons water
  • 1 tablespoons curry powder
  • Pinch of cayenne pepper
  • 1/2 currants
  • 4 cups bean sprouts
  • 1/2 toasted peanuts, chopped for garnish
  • Fresh chives, chopped for garnish

Instructions

  1. Melt butter in a large, heavy skillet. Saute onion, celery, pepper, garlic, and apple for about 1 minute.
  2. Add chicken stock, currants, seasonings and arrowroot mixture. Saute, stirring, until the liquid begins to thicken.
  3. Add sprouts, mix well and cook until just tender, about 1 minute. Serve garnished with peanuts and chives.
