Chicken Kebabs with Spicy Lime Sauce |

This Chicken Kebab recipe will be sure to add some heat to a cold winters night.
Ingredients
- 4 teaspoons extra-virgin olive oil
- 4 cloves garlic, peeled and mashed
- 1 jalapeno pepper, seeded and finely chopped (wear gloves)
- 1/2 onion, finely chopped
- 4 tablespoons chives, minced
- 4 tablespoons fresh parsley, minced
- 1 pound skiunless boneless chicken breasts, cut into 1 inch chunks
- 1/2 chicken broth
- 2 teaspooons fresh thyme, chopped
- 1 lemon, juiced
- Salt and pepper
Instructions
- In a large bowl, combine half the oil, half the garlic, half the chile, half the onion and half the chives and parsley. Add the chicken and refrigerate for at least 1 hour or overnight.
- To make the sauce, heat the rest of the oil in a skillet over medium heat. Add the remaining garlic, onion and chile. Saute for about 1 minute. Add the chicken broth and simmer for about 1 minute. Remove from heat and add the rest of the chives and parsley and thyme. Season with salt and pepper to taste. Keep warm.
- Prepare a hot fire in a grill. Thread the chicken loosely on the skewers (you may want to double skewer for stability.) Grill for 2 minutes per quarter turn for a total of 8 minutes, until the chicken is cooked through but not dry. Serve immediately with a tablespoon of sauce drizzled over each serving. Pass the extra sauce for dipping.
