Chicken Gumbo

After trying this simple yet filling gumbo recipe, you may just be adding it to your list of favorites!
Ingredients

  • Meat from 2 cooked chickens, cut up
  • 2 tablespoons extra-virgin olive oil
  • 2 large onions, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 1/2 cup tomato paste
  • 3 cups chicken sauce
  • 4 cloves garlic, crushed
  • 1 teaspoon each dried basil, oregano and crushed green peppercorns
  • 3 tomatoes, peeled, seeded and chopped
  • Salt
  • 1 tablespoon file powder

Instructions

  1. Saute onions and peppers in butter and olive oil until soft. Add tomato paste and chicken broth and bring to a boil. Skim, reduce to a simmer, and add chicken meat and seasonings.
  2. Simmer about 1 hour, uncovered, stirring occasionally.
  3. About 10 minutes before serving, stir in tomatoes and season to taste. Remove from heat and stir in file powder.
