Chicken Gumbo |

Ingredients
- Meat from 2 cooked chickens, cut up
- 2 tablespoons extra-virgin olive oil
- 2 large onions, chopped
- 1 red bell pepper, seeded and chopped
- 1 green bell pepper, seeded and chopped
- 1/2 cup tomato paste
- 3 cups chicken sauce
- 4 cloves garlic, crushed
- 1 teaspoon each dried basil, oregano and crushed green peppercorns
- 3 tomatoes, peeled, seeded and chopped
- Salt
- 1 tablespoon file powder
Instructions
- Saute onions and peppers in butter and olive oil until soft. Add tomato paste and chicken broth and bring to a boil. Skim, reduce to a simmer, and add chicken meat and seasonings.
- Simmer about 1 hour, uncovered, stirring occasionally.
- About 10 minutes before serving, stir in tomatoes and season to taste. Remove from heat and stir in file powder.
