Chicken and Spinach

Chicken, spinach and potatoes combine to give this dish two thumbs up.
Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 6 boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 pounds red potatoes, cut into 2 inch cubes
  • 1 1/2 cups chicken stock
  • 1 teaspoon thyme
  • Sea salt and pepper
  • 3 cups spinach

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides.
  2. Add the onion, potatoes, chicken stock, thyme and salt and pepper. Lower the heat, cover and simmer for 10 minutes or until the chicken is cooked.
  3. To serve, place a 1/2 cup of spinach on each plate, then place the chicken on top to wilt the spinach.
