Chicken and Spinach |

Chicken, spinach and potatoes combine to give this dish two thumbs up.
Ingredients
- 1 tablespoon extra-virgin olive oil
- 6 boneless, skinless chicken breasts
- 1 onion, chopped
- 2 pounds red potatoes, cut into 2 inch cubes
- 1 1/2 cups chicken stock
- 1 teaspoon thyme
- Sea salt and pepper
- 3 cups spinach
Instructions
- Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides.
- Add the onion, potatoes, chicken stock, thyme and salt and pepper. Lower the heat, cover and simmer for 10 minutes or until the chicken is cooked.
- To serve, place a 1/2 cup of spinach on each plate, then place the chicken on top to wilt the spinach.
