Broccoli Rabe with Olives |

Try broccoli rabe with olives in this nutritious side dish.
Ingredients
- 1 tablespoon extra-virgin olive oil
- 4 garlic cloves, peeled and mashed
- 2 pounds broccoli rabe, ends trimmed and roughly chopped
- 3/4 cup hot water
- Zest of 1 lemon
- 1/4 cup kalamata olives, pitted and chopped
- 1 lemon, juiced
- Sea salt and pepper
Instructions
- Heat oil in a large skillet over medium-high heat. Add garlic and cook until fragrant, 1 to 2 minutes. Add broccoli rabe, water and lemon zest, cover and cook until broccoli rabe is wilted and stems are tender, about 4 minutes.
- Remove from heat, stir in olives and lemon juice and season to taste.
