Broccoli Rabe with Olives

Try broccoli rabe with olives in this nutritious side dish.
Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 4 garlic cloves, peeled and mashed
  • 2 pounds broccoli rabe, ends trimmed and roughly chopped
  • 3/4 cup hot water
  • Zest of 1 lemon
  • 1/4 cup kalamata olives, pitted and chopped
  • 1 lemon, juiced
  • Sea salt and pepper

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add garlic and cook until fragrant, 1 to 2 minutes. Add broccoli rabe, water and lemon zest, cover and cook until broccoli rabe is wilted and stems are tender, about 4 minutes.
  2. Remove from heat, stir in olives and lemon juice and season to taste.
