Beef Fried Rice |

What a yummy combination of flavors in this beef fried rice recipe. It will definitely be one to come back
Ingredients
- 2 tablespoons extra-virgin olive oil
- 3 large eggs, lightly beaten
- 1 1/2 punds flank steak, cut into thin strips
- 1 tablespoon naturally fermented soy sauce
- 4 scallions, sliced
- 3 cloves garlic, peeled and mashed
- 1 tablespoon freshly grated ginger
- 1 head box choy, cut crosswise into 1/2 inch strips
- 2 cups cooked brown rice
- Sea salt and pepper
Instructions
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add eggs and swirl to cover the bottom of the pan, lifting the edges with a heat proof spatula then let the uncooked egg reach the bottom of the pan. Continue until the egg is set, about 1 minute. Remove the egg from the pan and slice.
- Season steak with salt and pepper. Add to the same skillet and cook over medium-high heat, stirring frequently, until browned, about 5 minutes. Transfer to a bowl, add soy sauce and stir.
- Heat remaining oil in the pan over medium-high heat. Add the scallions, garlic and ginger and cook for 1 minute. Add box choy and cook, stirring occasionally, until crisp-tender, about 4 minutes. Add reserved beef, egg and the rice, cook 2 minutes more. Serve hot.
