Beef Fajitas |

The combination of lime, vinegar, garlic, and cilantro is what singles out this beef fajita recipe from the rest.
Ingredients
- 2 limes, juiced
- 1/4 cup rice vinegar
- 5 teaspoons cumin
- 6 cloves garlic, peeled and mashed
- 2 tablepoons extra-virgin olive oil
- 1 pound flank steak, cut into thin strips
- 1 onion, sliced
- 1/2 cup cilantro, chopped
- 6 sprouted tortillas
Instructions
- Whisk together in a medium bowl the lime juice, vinegar, cumin, half the garlic and half the olive oil. Add the beef and stir to coat. Place in the refrigerator for 1 hour to marinate.
- In a skillet or wok heat the remaining olive oil over medium-high heat. Saute the onion and the remaining garlic till translucent but don't let i brown. Add the bell peppers and cook till crisp-tender, set aside.
- Remove meat from refrigerator and take the meat out of the marinade. Discard the marinade. Saute the beef till cooked to your liking. Add the onion bell pepper mixture and warm together for a minute. Add the cilantro and toss well to mix. Warm tortillas and serve.
