Basil Coconut Thai Chicken |

Add some texture and flavor to your chicken with this Thai Chicken recipe.
Ingredients
- 2 cups basil, chopped
- 2 onions, chopped
- 2 tablespoons coconut oil
- 3 tablespoons curry powder
- 1/2 teaspoons cayenne
- 1 teaspoon sea salt
- 5 garlic cloves, crushed
- 1 pound chicken breasts sliced into 1/2 inch strips
- 1 can of coconut milk or more if needed to make a nice amount of sauce
- 2 heads of broccoli
- 1/2 head of cauliflower
- 2 carrots, diced
Instructions
- Saute basil, onions, and 1 tablespoon coconut oil until onions translucent and set aside.
- Saute curry powder, cayenne, salt, garlic, and the other tablespoon coconut oil for 30 seconds.
- Combine all previously sauteed ingredients with the chicken- cooking the chicken until almost fully cooked.
- Add coconut milk, broccoli, cauliflower, and carrots until al dente. Serve over brown rice.
