Basil Coconut Thai Chicken

Add some texture and flavor to your chicken with this Thai Chicken recipe.
Ingredients

  • 2 cups basil, chopped
  • 2 onions, chopped
  • 2 tablespoons coconut oil
  • 3 tablespoons curry powder
  • 1/2 teaspoons cayenne
  • 1 teaspoon sea salt
  • 5 garlic cloves, crushed
  • 1 pound chicken breasts sliced into 1/2 inch strips
  • 1 can of coconut milk or more if needed to make a nice amount of sauce
  • 2 heads of broccoli
  • 1/2 head of cauliflower
  • 2 carrots, diced

Instructions

  1. Saute basil, onions, and 1 tablespoon coconut oil until onions translucent and set aside.
  2. Saute curry powder, cayenne, salt, garlic, and the other tablespoon coconut oil for 30 seconds.
  3. Combine all previously sauteed ingredients with the chicken- cooking the chicken until almost fully cooked.
  4. Add coconut milk, broccoli, cauliflower, and carrots until al dente. Serve over brown rice.
