Balsamic Chicken

Give regular chicken breasts some zest and tang with vinegar in this balsamic vinegar recipe.
Ingredients

  • 3 tablespoons oat flour
  • Sea salt and pepper
  • 6 boneless, skinless chicken breasts
  • 1 tablespoon extra-virgin olive oil
  • 1 cup balsamic vinegar
  • 1 cup chicken stock
  • 1 teaspoon rosemary

Instructions

  1. On a plate, mix the flour and salt and pepper. Dredge the chicken and tap off any excess.
  2. Heat the oil in a skillet over medium-high heat. Add chicken and brown on both sides, about 2 minutes per side. Then add the vinegar and bring to a boil. Reduce heat and simmer until the vinegar reduces by two-thirds.
  3. Add the chicken stock and continue to simmer until the chicken is done, about 10 minutes. Remove the chicken and keep warm.
  4. Add the rosemary and keep the sauce boiling until it is reduced some more, about 10 minutes. serve the chicken with the sauce spooned over the top.
