Balsamic Chicken |

Give regular chicken breasts some zest and tang with vinegar in this balsamic vinegar recipe.
Ingredients
- 3 tablespoons oat flour
- Sea salt and pepper
- 6 boneless, skinless chicken breasts
- 1 tablespoon extra-virgin olive oil
- 1 cup balsamic vinegar
- 1 cup chicken stock
- 1 teaspoon rosemary
Instructions
- On a plate, mix the flour and salt and pepper. Dredge the chicken and tap off any excess.
- Heat the oil in a skillet over medium-high heat. Add chicken and brown on both sides, about 2 minutes per side. Then add the vinegar and bring to a boil. Reduce heat and simmer until the vinegar reduces by two-thirds.
- Add the chicken stock and continue to simmer until the chicken is done, about 10 minutes. Remove the chicken and keep warm.
- Add the rosemary and keep the sauce boiling until it is reduced some more, about 10 minutes. serve the chicken with the sauce spooned over the top.
