This is a must try recipe if you are searching for a quick way to prepare your lamb chops that definitely doesn't skimp on flavor!
Ingredients

  • 8 lamb chops, about 3/4 inch thick
  • 1/4 cup extra-virgin olive oil
  • 1 bunch parsley, chopped
  • 4 cloves garlic, peeled and mashed
  • 2 lemons, juiced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Sea salt and pepper

Instructions

  1. Heat grill or frill pan to high. Rub lamb chops with 1 tablespoon of oil and salt and pepper. Grill 4 minutes per side. Place on a platter and cover with foil.
  2. Puree the remaining oil, parsley, garlic, lemon juice, oregano and red pepper flakes in a food processor. Season to taste. Serve over the lamb.
