Applesauce-Pumpkin Muffins |

What a great combination of flavors in these healthy muffins!
Ingredients
- 1/2 cup unsweetened applesauce
- 1/2 cup canned pumpkin
- 2 large egg whites
- 1 large egg yolk
- 2 tablespoons plus 1 teaspoon olive oil
- 1/2 cup unsweetened almond milk (or milk of your choice)
- 1/4 cup maple syrup
- 1 cup rolled oats
- 1 tablespoon baking powder
- 1/3 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon pumpkin pie spice
- 1/2 cup flour of your choice (quinoa, spelt, etc.)
- 1/4 cup garbanzo bean flour
- 1/2 cup raisins (optional)
Instructions
- Preheat oven to 3/75 degrees. Mix wet ingredients and dry ingredients separately and then add together.
- Grease or add paper to muffin tins. Fill 3/4 way and bake 15-20 minutes. Makes about 1 dozen regular muffins.
