White Bean Dip |

This dip is very similar to hummus but with a milder flavor, and is brightened by the lemon juice. For bolder flavor, substitute black beans and add a little cayenne.
Ingredients
- 1/4 cup olive oil
- 1 clove garlic, chopped finely
- 1- 15.5 oz can white beans or great northern beans, drained
- 1/2 teaspoon salt
- 2 tablespoons water
- Juice of 1 small lemon
Instructions
- Place 3 tablespoons of the olive oil and the garlic in a skillet. Cook over medium heat. As soon as the garlic is fragrant, add the beans and salt. Heat through.
- Puree in a blender with the water, to make a smooth paste. Place in a serving bowl and pour the remaining 1 tablespoon of olive oil over the top.
