Slow Cooker Split Pea and Kale Stew
Gluten Free, Low Fat

This recipe only takes about 10 minutes to prepare and the slow cooker does the rest. It makes about 6 servings of one cup each.
Ingredients
2 cups dry green split peas
½ cup shredded kale
2 celery sticks, chopped
2 small carrots, diced
1 medium white onion, chopped fine
2 bay leaves
8 cups vegetable stock
1 tsp dry parsley
3 tsp salt
¼ tsp black pepper
¼ tsp cumin
Preparation
Put all ingredients in a slow cooker. Set it on high for 4 hours, or low for 6 hours.
