What makes this bean salad stand above the rest is the very flavorful dressing that consists of apple cider vinegar, anise seed, fennel seed, and mustard seed to name a few.
Ingredients

  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can garbanzos, drained and rinsed
  • 1 medium onion, diced
  • 1 cup celery, thinly sliced
  • 1/4 cup cilantro, chopped
  • Optional, chopped olives
  • Dressing
  • 1/3 cup Evoo
  • 1/3 cup raw apple cider vinegar
  • 4 packets Truvia
  • 1 teaspoon anise see
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon orange peel
  • 1/2 teaspoon fennel seed
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon mustard seed
  • 1/4 teaspoon cayenne pepper
  • Himalayan sea salt and pepper to taste

Instructions

  1. Mix together and refrigerate for several hours to marinate; keeps for several days.
