Tea Preparation and Anti-oxidants

An study published in Journal of Food Science examined various methods of brewing various teas and their anti-oxidant content. The results were interesting:

  • White tea: steeping for longer time meant more antioxidants. Temperature did not matter. 
  • Black tea: short hot water infusion resulted in the highest level of antioxidants. Increasing the time in hot water reduced antioxidant activity. 
  • Green tea: prolonged cold steeping (two hours) resulted in the highest level of antioxidants.
