Refreshing Raw Cool Cucumber Soup
If you simply love Summer, but hate melting into a pool of water...Try this raw, cold, cleansing, alkalinizing "Healthy Eating" cucumber soup and you'll not only feel as cool as an ice cube, but you'll also feel detoxed and refreshed as a Yogini. You can't go wrong with this easy, delicious hydrating soup that will help you stay healthy and use up all those cucumbers growing in your garden!
Want to be extra popular with your friends? Serve this soup up in small shot glasses - Top them off with sliced cucumber and avocado on a cute toothpick. Yum yum!!

Ingredients:
2 cups Fresh Ontario English (seedless) cucumber, chopped (reserve a few slices for garnish)
1 cup zucchini, chopped
1 cup avocado, peeled and chopped (reserve a few slices for garnish if desired)
Juice of 1 large lemon
1 small garlic clove, minced
2 tablespoons high quality, cold-pressed extra-virgin olive oil (we use & recommend Sarafino)
1/2 teaspoons pink Himalayan salt
2 cups cold water (use more or less, as desired)
Instructions:
1. Blend all ingredients in a blender until smooth
2. Serve cold or at room temperature...even better if made a few hours, or even the day ahead...letting the flavours meld
