Sweet and spicy cashew wraps

filling

2 cups raw cashew(soaked)

1-2 dried pineapple rings(soaked) 

2 TBS red onion 

1 garlic clove chopped

2 springs cilantro(optional for Phyllis)

 1/2 lime,juiced

2TB raw honey (use agave if you have blood sugar issues)

4 sun-dried tomatoes (if not in oil,soak)

1 chopped jalapeno

2 TB cashew butter (I use almond butter)

Prep: Soak dried pineapple rings and sun-dried tomatoes for 1 hour. You may want to soak the cashews for an hour or two,then rinse and drain. You can add soak water from tomatoes and pineapples to the mixture as you are processing to moisten the filling.

Directions: Place all ingredients in food processor. Pulse a few times to combine ingredients but mixture should be chunky and crumbly.

Ginger Honey Dipping Sauce ( I love this sauce)

1-2 chunks fresh ginger

1/3 cup raw honey (use agave if you have blood sugar issues)

1 lime juiced

3 TB nama shoyu or tamari

1 lg. garlic clove

1/4 tsp. crushed red pepper flakes

1 green onion, chopped

Prep: Grate ginger on smallest section of grater and add to small bowl(minus fibers), juice a small lime and add to small bowl.

Directions: Press garlic into bowl with ginger and lime juice. Add other ingredients, stirring well to blend the honey.

Honey Butter Dipping Sauce

1/2 cup cashew butter

1 Lg garlic clove 

2 TB raw honey or agave nectar

1/2 lime, juiced

2TB spring water

Cayenne

Directions: Press garlic and add to other ingredients in food processor. Add cayenne to taste

( careful that stuff is potent!)

Veggies

Directions: Add 1 large bunch of collard leaves. Optionally use grated carrots, cabbage, bean sprouts, spinach leaves, cucumber matchsticks,cherry tomatoes, red bell pepper, jicama, fresh pineapple, raisins, or onions.

Assembly

Wash collard leaves. Slice down the center of each side of the spine, leaving 2 halves. Place leaf on a plate lengthwise. Spread about 2 TB of filling along the lower half of the leaf. Spoon on the veggies (don't over fill or it will be hard to roll up). Drizzle a small amount of the dipping sauce on top. Sprinkle on sesame seeds. Roll into burrito shape. Serve with dipping sauce. ENJOY!!!!
