Sweet and Spicy Cashew Wraps
Filling:
2 cups raw cashew
1-2 dried pineapple
2 TB red onion
1 garlic clove
2 springs cilantro
1/2 lime, juiced
2 TB raw honey
4 sun dried tomatoes
1 jalapeno (seeds removed)
2 TB cashew butter
Prep: Soak dried pineapple rings and sun-dried tomatoes for one hour. You want to soak the cashews for an hour or two, then rinse and drain. You can add soak water from tomatoes and pineapples to the mixtures as you are processing to moisten the filling.
Directions: Place all ingredients in food processor. Pulse a few times to combine ingredients but mixture should be chunky and crumbly. Place in bowl while you make dipping sauces.
