Everyone loves salsa and it is really good for you! It's the chips that drag you down the
empty calorie lane. Here is a new way to enjoy an old favorite: serve your salsa on a
bed of rice-looking cauliflower. I promise it really is better than it sounds and it will give
you an amazingly wonderful meal without the evil deep fried corn chips!
Cauliflower Rice

Take one head of cauliflower and cut it into equal sized florets.
Place them in the food processor with the S blade and pulse until you have small rice sized bites.
Put them aside.
Salsa
======
Medium onion
3 cloves of garlic pressed or minced (I like garlic, so you can go up or down with this depending on your vampire preference!)
1 t salt ( I also like salt, so you can decrease this if needed)
1 jalapeno pepper chopped (I wear gloves when handling these things! Remove the seeds and don't touch body part, especially your eyes)
10 Roma tomatoes cut in half
1T fresh cilantro (I dry the remaining cilantro in my dehydrator so I don't throw it away in a few days)
Juice of ½ fresh lime
Blend the first 4 ingredients until the onion is well chopped. Add last 3 ingredients and blend until the tomatoes are nicely chopped.
Place "rice" into a bowl and spoon the salsa on top. It even looks great! I also like to just mix the rice into a salsa for an interesting Mexican tasting salad. ENJOY!!!
