Great news- just so happens that pumpkins are an anti-inflammatory food! They are rich in carotenoids, the bright orange pigment, and they also happen to be a great source for anti-oxidants!

Wondering what to make with your pumpkins?  Bake them!  Whether it’s a pie, a pumpkin soup, or roasted pumpkin seeds, pumpkin can be offered in a variety of edible ways.  Love to bake pies? You can do what some of our offices love to do...Share them with others!!

Pumpkin isn’t just a tasty treat, there are many health benefits to eating pumpkin!

  • Nutrients!  Thank goodness you can also look at how pretty pumpkins were this Fall; they are actually helping your vision! Pumpkin is filled with nutrients that convert to vitamin A...and vitamin A helps promote good eye sight.
  • Fiber!  Pumpkin is also a great source of fiber! Increasing your fiber intake is good for your digestive system and can also help you feel fuller longer; causing you to eat less and helping you lose weight. So, instead of a handful of candy, grab a handful of pumpkin seeds for a snack!
  • Pumpkin is full of vitamin C!  That's a great way to get your C intake...especially if you are tired of sugary orange juice or taking a pill!

Try this yummy pumpkin recipe below curtesy of Eating Well.  (It's also gluten free.)

Ingredients:

  • 4 ounces gluten-free gingersnap cookies 
  • 1 cup walnut halves, divided
  • 4 teaspoons walnut oil or canola oil
  • 12 ounces reduced-fat cream cheese (Neufchâtel)
  • ½ cup granulated sugar
  • ½ cup packed dark brown sugar
  • 2 teaspoons pumpkin pie spice
  • 3 large eggs
  • 1 tablespoon gluten-free vanilla extract 
  • 1 16-ounce container nonfat cottage cheese
  • 1 15-ounce can unseasoned pumpkin puree
