MOCK DIRTY RICE
This dish will shock you and everyone around you! The rice in this dish is not really rice or a grain of any kind
for that matter...it's actually cauliflower! This dish does not taste like cauliflower and you really think you are chewing
on grains.
2 Tbsp coconut oil or extra virgin olive oil
4 cloves garlic, minced
1 cup white onion, diced
2 celery stalks, chopped
1 cup green pepper, diced
1 cup red pepper, diced
1 bunch scallions, chopped
3 cups cauliflower, riced with your food processor or box grated *see note
1 tsp fresh thyme
1 bay leaf
½ tsp salt
½ tsp pepper
¼ tsp chili powder
½ tsp cumin
2 cups chicken stock
~ Heat oil over medium heat in a large skillet
~ Add garlic, onion, celery, peppers and scallions; saute until soft
~ Stir in riced cauliflower, adding thyme, bay leaf, salt, pepper, chili and cumin
~ Add in the chicken stock
~ Allow to simmer over medium-low heat, stirring frequently, for 30 minutes or so or until liquid is cooked
down
NOTES:
* This step is super easy to do. Cut your cauliflower into small pieces and process in a food
processor on low until you get small bit consistency. It literally takes seconds.
* I even enjoy leftovers on top of scrambled eggs
