Cookie Dough Blizzard

blizzard_1.jpg
Be prepared to be wowed!  Did you know you can make ice cream just from a frozen banana?  Drop pieces of frozen banana into a food processor and blend away till you have a smooth consistency like ice cream. Try it!  You will be amazed!!!

Serves 2

Cookie Balls:
1/2 cup unsalted raw cashews
1/4 cup rolled oats
1/4 cup whole wheat pastry flour
1/2 tsp salt
1-1/2 Tbsp natural cane sugar
1/2 tsp pure vanilla extract
2 Tbsp + 1/2 tsp pure maple syrup
dark or semi-sweet chocolate chips *see note

~ In a food processor or a vita-mix blender, add the cashews and oats and process until it forms a fine
   crumble
~ Add in the salt, sugar and flour and process for a few seconds more
~ Add in maple syrup and vanilla and process until combined (it will be sticky. You can add more syrup if its
too dry however I never have that problem)

~ Add in chocolate chips and stir by hand
~ Form into balls and store in freezer

Blizzard:
3 peeled and frozen bananas *see note
Splash of almond milk or raw milk if needed (mine does not require any)
Desired amount of cookie dough balls
Optional:Heaping spoonful of natual peanut butter

~ In a large food processor or vita-mix blender, process bananas stopping and scraping down the sides as
   needed
~ Add in cookie dough and process until throughly mixed
~ When down, it should resemble soft serve ice cream consistency
~ Pour into glass and top with additional crumbled cookie dough balls if desired

NOTES:
* Peel and slice your banana into 4-6 pieces or approx 1-inch chunks before freezing, it will
   make blending easier
* Adding chocolate to the dough balls helps cut the sweetness of the banana; it can be left
    out
* The peanut butter can also be left out
* Be patient with blending the frozen bananas, they will turn to soft serve ice cream
consistency. It is easier if the bananas are not rock hard.
