LIME HONEY-MUSTARD DRESSING
Yields: about ¾ cup
1/4 cup rice vinegar or white wine vinegar
1 shallot, finely chopped
2 Tbsp finely chopped cilantro
1-1/2 tsp Dijon mustard or brown mustard
1-1/2 tsp honey
1 tsp fresh lime juice
1/2 tsp grated, peeled fresh ginger
1/2 tsp salt
1/8 tsp fresh ground pepper
1/4 cup extra virgin olive oil
Grated rind of 1 lime
