BEEF AND QUINOA MEATBALLS
Your kids will never know they are eating veggies! Enjoy these on their own, add them to your next pasta dish or make
meatball sandwiches out of them.
1 lb 95% lean ground beef or turkey
3/4 cup cooked quinoa
1 Tbsp tamari soy sauce
1/4 cup finely chopped onions
1/2 tsp pepper
1/4 cup finely grated carrots
1/2 tsp sea salt
1/4 cup finely grated zucchini
1/4 tsp dried oregano
2 Tbsp ketchup
1/4 tsp dried thyme
1 Tbsp chopped garlic
1 egg
~ Line a baking sheet with foil
~ In a large bowl, mix together all ingredients until well combined
~ Shape mixture into balls and place on baking sheet
~ Bake at 500 degrees until cooked through and golden brown, 12-15 minutes
