GOOEY NUT BUTTER BITES
1/2 scant cup
pine nuts
1/2 cup Medjool dates, pitted and loosely packed
(approx 8 thumb size dates)
1 tsp pure vanilla extract
~ Grind the pine nuts
~ Add in dates and vanilla
~ Grind but don't over grind…it will look like you have pine nut
pieces
~ Spread onto parchment paper
~ Refrigerate or freeze for a few hours and cut into pieces
~ Store in fridge or freezer
NOTES:
* any type of nut butter can be thinly spread over one piece and then topped with another piece
