Be prepared to be wowed! Did you know you can make
ice cream just from a frozen banana? I like bananas but I don't love them. However I love this recipe!!! Give it a try....I think you will be
amazed!!!
Serves 2
Peanut Butter Cookie Dough Balls
1/2 cup unsalted raw cashews
1/2 cup regular rolled oats
1/4 cup brown teff flour
1/2 tsp salt
2 Tbsp organic cane sugar
3 Tbsp natural peanut butter
3 Tbsp pure maple syrup
1/2 tsp pure vanilla extract
1/4 cup chocolate chips *see below
Optional: 1/4 cup diced peanuts
~ In a food processor or vita-mix blender, process the cashews and oats until very fine, like a
flour consistency
~ Add in the teff flour, salt, and sugar and pulse until combined
~ Add in vanilla, peanut butter and maple syrup gradually until desired consistency is achieved.
~ Process until a dough forms. Stop to scrape the sides of the bowl as necessary. Dough will be very sticky!
If it is too sticky to make balls, you can add a bit more flour.
~ Add chocolate chips and peanuts, if using into processor and pulse
~ Form balls with the dough
~ Store in the fridge or freezer
Blizzard:
3 large frozen bananas
1 heaping Tbsp natural peanut butter
Peanut Butter Cookie Dough balls to pulse into soft serve
2-3 PB cookie dough balls to crumble on top
~ Place frozen bananas in a food processor or vita-mix blender and process them with a heaping tablespoon
of peanut butter. Scrape around the sides as needed. Be patient but it will process up smooth, thick and
creamy just like ice cream
~ Once the mixture is creamy like soft serve, add in a few peanut butter balls and pulse until chunky
~ Scoop this mixture into a small glass and top with crumbled cookie dough balls
NOTES:
* If dough is too dry, add a bit more maple syrup. If too wet, add a bit more flour.
* Peel and slice your banana into 4-6 pieces or approx 1-inch chunkc before freezing, it will
make blending easier
* Adding chocolate to the dough balls helps cut the sweetness of the banana; it can be left
out
* The frozen bananas are easier to blend if they are not rock hard
