CREAMY CILANTRO-AVOCADO DRESSING
Yields: about 1 cup
1/2 ripe avocado
3/4 cup packed cilantro
1/2 cup plain greek yogurt
2 chopped scallions
1 garlic clove, quartered or minced
1 Tbsp fresh lime juice
1/2 tsp xylitol
1/2 tsp salt
~ Process in a blender till smooth
~ Add water if dressing is too thick
NOTES:
~ Compliments Mexican or Seafood dishes
~ Great served as a dip for veggies
~ Thin to use a salad dressing
