RED PEPPER VINAIGRETTE
1 red bell pepper, seeded
2 Tbsp freshly squeezed lemon juice
1/2 cup extra virgin olive oil
3 cloves garlic
Pinch of cayenne pepper
1/2 tsp salt
1/3 cup water
~ Blend for at least a minute, then continue blending so that the dressing becomes creamy
NOTE:
This dressing has a little bite to it. You can leave the cayenne out and also back down the garlic to 2 cloves if you desire.
