COUSCOUS BAKE
1-1/4 c dry couscous
2 c water
1/3 c pine nuts
5-7 c raw spinach *Just grabbed 5-7 big handfuls
1 can drained diced tomatoes, reserve 1/3c of juice
1 medium onion, diced
3 garlic cloves, minced
2 Tbsp coconut oil or extra virgin olive oil
approx 1 c mozzarella/provolone cheese blend
½ tsp salt
1 tsp dried parsley
1 tsp dried oregano
2 tsp dried basil

~ In a large skillet, heat 1T oil over medium/low heat
~ Add the garlic and onions and sauté for 10min
~ Add drained, diced tomatoes and sauté for 10 more minutes
~ Meanwhile, in a medium pot, boil 2 cups water
~ Stir in 1T oil (coconut or EVOO), salt, and the couscous then take off heat and cover
~ After 5 minutes, uncover and fluff with a fork
~ In a 9×13 pan mix couscous, raw spinach, onion mixture and reserved 1/3c tomato juice
~ Top with cheese and bake at 350 degrees for 15min
~ In a small pan, toast the pine nuts over low heat for ~5min until lightly brown.
~ Broil 3-5 minutes until cheese starts to brown. Watch closely!
