MASHED POTATO CAKES with ONION AND KALE
1 bunch kale, trimmed (about 4oz)
2-2/3 cups (1-inch) cubed Yukon gold or red potato (I use 4 Yukon gold potatoes)
¾ tsp salt, divided
1 Tbsp extra virgin olive oil
1 Tbsp unsalted butter
3 cups diced onion
2 Tbsp chopped fresh sage
¼ cup sliced green onion, optional
¼ tsp freshly ground black pepper
~ Bring a pot of water to a boil; add kale
~ Cover and cook till tender (approx 5 minutes)
~ Remove kale with a slotted spoon, reserving cooking liquid
~ Chop kale and set aside
~ Add cubed potato to reserved cooking liquid
~ Simmer until potatoes are tender
~ Drain and partially mash potatoes with a potato masher
~ Stir in kale and ¼ tsp salt
~ Preheat oven to 400 degrees
~ Heat oil and butter in a large skillet
~ Add ½ tsp salt, diced onion and chopped sage; cook 13 minutes or until browned
~ Combine potato mixture, onion mixture, green onions and pepper
~ Remove from heat; cool slightly
~ Divide potato mixture into 8 equal portions, shaping each into a ½-inch thick patty
~ Place patties on a baking sheet coated with cooking spray
~ Bake 20 minutes
~ Broil patties for 5 minutes or until browned
* Serve any leftovers with eggs the next day
